Why not make it out of geometry? Loft an s-shape, and array it, detach all
faces, rotate to roof angle and mirror copy — oughta' take you about 20
minutes (tops)

Sure (though using displace _would_ be making it out of geometry) — though
you'd need to double array it — that is follow your process, but the loft
would only represent the length of one tile. Then, you'd need to copy and
overlap the subsequent rows of tiles (unless a bump map would be good enough
for the particular use).
Heck, you could use skin.axp, for that matter — loft a squiggly section
representing the length of the roof, "slice" it, position the slices and let
the supersmooth faces appear at render time. Though, this'd probably be
overkill unless you were going to animate "Harry, The Magic Tile-Roof"!<g>
