Others may add technical notes or suggestions, but my reaction is: You can't
do it with a cable.
To create a composite color signal from RGB, you must: add a precisely-timed
colorburst signal to each scan line; analyze the RGB ratios and derive two
separate color-information signals; then modulate these signals into a
precisely-timed (again!) color subcarrier which is then blended into the
composite signal.
No chance of doing that with a cable. A plus-in module with the right
electronics would be the way to go.

But a lot of TV's can be connected with a SCART-Cable. The TV has to support
the RGB-Pins of the SCART-Connector. This gives You the best results that You
can get (with a TV). I once saw such a cable but I am in Germany and You in the
States, so You have to find or make one yourself!

PMJI, However, I don't think SCART cables are used in the US. I had never
heard of them until I moved to Frankfurt for 3 years. Of course, I could be
wrong.
