I think the most common mistake I've seen people make when beveling text is
trying to create their bevel *inside* the outlines of their typeface character.
In otherwords, they create the bevel deformations using ranges less than 100%
up to 100% and back again. Check to make sure that you are scaling the bevel
values starting at 100% to a larger size and back to 100%.
Large interior bevels usually produces the "first level…distorted" effect you
are describing. Leave the "1st" level alone, and scale your bevel deformation %
larger.
If you absolutely must create an interior bevel, you need to select a typeface
with large stroke widths that have enough interior room to build the bevel.
