I think that just studying theory will get you what you want.
However, I don't know if there are many courses around that would
teach that kind of stuff without making you do it. In school, we
learn the theories of colour mixing, only so that we can go use them
in a painting. Everything we learn can be gotten straight out of a
book but I think you get a better appreciation for it from actually
doing it.
For example, you can learn that you add a complementary colour to
darken something, not black (add red to darken green, not black).
This is just information. You can use it in 3DS by setting the
Ambient and Diffuse settings of materials to the right colours for
shading.
I think that doing any creative act in whatever medium will help in
any other medium. So that shading with a pencil will "get the
creative juices flowing", so to speak, so that it can help with
animation.
