Sonix, from OXXI/AEgis, or Deluxe Music Construction Set, from
Electronic Arts, would probably be what you need. Sonix is a bit more
limited than DMCS, but DMCS is buggy, and has not been updated in a *long*
time. Both use standard musical notation to write scores. Sonix will let
you create "algorythmic" instruments, or use sampled sounds. I'm not sure
about DMCS, but I think you have to use a separate program to create the
instruments. (I don't have DMCS, so I could very easily be wrong on that
point.)
