The most visible difference between 1270 and 2540 comes when viewed through a lupe on output to film. You should be able to notice the difference in "jaggies". Images when run to paper tend to spread slightly, which helps to narrow the difference between the two resolutions. There shouldn't be any spread in properly exposed film. Certainly outputting to paper and not using a lupe, you can't see a difference and the average reader can't either. I agree, that outputting text to 2540 is overkill … unless minute detail (smaller font sizes) is critical.
