What goes to make up the inputs of an analog joystick? Are left and right
simply two potentiometers to give varying degrees of movement? If so what would
the resistance values needed, to be fed into the Amiga to get them to work as
left and right?

Each pot needs to be about 750k ohms max resistance; buy 1M ohm pots and add a
fixed resistor in parallel. Connect them from the +5 volt supply pin to the
appropriate X or Y signal pin. The software will discharge a capacitor to
ground and count how long it takes to charge back up.
Over here in the States, we get analog return values of 0 – 511. But this is
actually the video line number of when the analog value reached its threshhold.
In PAL/50Hz territory, your results may differ.
