I've been putting metaform to use, but just a little while ago I noticed that
it creates many non-planar polys! There seems to be no problem when rendering.
So are the polys that metaform is making more than just plain polys, or is
Lightwave a lot more tolerant of out of plane polygons when rendering?

It depends on what your flatness limit is for checking non-planars.
LightWave generally handles below the default of .5%, but if you had your
limit set lower, you would find more, but LW may handle it. Also, it
depends on the angles as seen from the camera.
To be absolutely certain of no non planars set your options for 0% before
checking.
