Tomatoes for sauce

Sounds sorta like us: we usually cook our day-to-day stuff together, but I
like to cook up a nice meal on the weekends. And invariably our son gives
me the time to prepare it, but then doesn't let us eat it when it's
done….
Here's a sauce recipe that I just love:
Prosciutto and Basil sauce
2 tbsp butter
2 tbsp olive oil (extra virgin, cold pressed! I like Spanish oils)
1/2 lb prosciutto, cut into thin slivers
1 medium-to-large onion, chopped
2-3 cloves garlic (the more the better!), minced fine
1/2 cup or so fresh basil (less if using dried)
1/4 cup fresh parsley
1 1/2 pounds good Italian plum tomatoes (I like Roma), peeled & chopped
1/2 cup dry red wine (I like a nice Rosso, D.O.C.G.)
hot peppers to taste
Pecorino Romano, grated (optional, but highly recommended)
Note: I use an herb grinder to grind up onions and garlic together
Melt butter in olive oil and saute prosciutto over medium heat until it
turns brown (around 3 minutes). Add onion and garlic and saute for around
2 minutes more. Reduce heat and add basil, parsley, peppers, tomatoes,
and wine. Cook uncovered for 15-20 minutes.
Serve over fresh pasta (I like spaghetti) and sprinkle Romano cheese over
top.
This is real easy to prepare, and it doesn't take very long either. And
it's delicious!
