I second the motion on 1270 being sufficient. We ran a test file at both
resolutions (for our Apple dealer; I told him I'd do the job for *free* if
he never sent another one) and if they hadn't been marked, I wouldn't have
known the difference. The image was of a parrot, mostly line art but with
two small tinted areas. I didn't throw a glass on it, however. –Russ Fish

The most visible difference between 1270 and 2540 comes when viewed through
a lupe on output to film. You should be able to notice the difference in
"jaggies". Images when run to paper tend to spread slightly, which helps
to narrow the difference between the two resolutions. There shouldn't be
any spread in properly exposed film.
Certainly outputting to paper and not using a lupe, you can't see a
difference and the average reader can't either. I agree, that outputting
text to 2540 is overkill … unless minute detail (smaller font sizes) is
critical.
2,540 isn't overkill if you're using a face with very thin and/or subtle
serifs. We use New Baskerville and can see a very big difference between
1,270 and 2,540.
