I'm guessing that you are starting with the book in a closed position, and if
you have each bone covering the entire area of each cover, I can see where your
influences may overlap. You might try creating the book in an already open
position, create your bones and animate it. One thing to be careful of is to
make sure that you don't change any bone positions or scales on frame 0 in the
Keyframer. This is because frame 0 in the KF = what's in the 3D Editor, which
changes each bone's initial settings and influences. I usually set my active
frame segment in the KF to start at frame 1 and I don't run into many problems.
So you can just close your book on frame 1 and open it over how ever many
frames you need. You'd also want to add a bone for the spine of the book, as
it should hold some kind of control over that area of your mesh as it opens..
